Paleo Mint Chocolate Truffles
These Paleo Mint Chocolate Truffles are pretty much the flavor of my summer. They are super easy and quick to make and they are refreshing and free of any processed sugars. Plus. Delicious.
1/2 cup extra virgin coconut oil*
1/8 cup of honey (or more to taste)
1/4 cup raw cacao
3 drops peppermint Essential Oil**
Mix all ingredients well until smooth and then put in silicone molds (or drop onto cookie sheet) and put in freezer for 10 minutes. Take out and enjoy melt in your mouth delicious truffles! Since they are coconut based and coconut oil melts at room temperature, these need to be stored in the fridge or freezer until you are ready to eat them, but eating them cold is very pleasant.
*Make sure the coconut oil isn’t completely liquid or the honey will not mix in and will sink to the bottom. If your coconut is liquid, put it in the fridge for a little while until it firms up a little bit.
** Only ingest food or therapeutic grade essential oils (where I get mine)
