I am a huge fan of hummus. And When I say huge fan I mean, I can skip the pita or veggies and just eat this stuff with a spoon. I used to have a hard time digesting hummus as it made me gassy. However, around the same time that I discovered the traditional way to properly prepare grains, a close friend came home from an extended stay in Jordan and she brought home an AMAZING recipe for hummus that involved soaking the beans for 3 days before ever making the hummus. It may sound crazy, but it is super easy and delicious as well as extremely digestible for those who well… have a hard time digesting legumes.
I added this Italian hummus to my list of super foods, not only are fresh garlic and ginger and oregano are extremely supportive of the immune system.
So you start by soaking the desired amount of garbanzo beans (chickpeas) in water with a splash of apple cider vinegar for 3 days. cover loosely with a cloth or lid. On the third day rinse the beans and put in a large pot. Cover with at least two inches of water and bring to a boil, then reduce to medium and cook until beans are soft enough to squish with a fork (3 -4 hours). You may have to add more water if it gets too low. Once beans are cooked, let them cool and you are ready to begin the hummus.
Italian Hummus Superfood
2 cups of properly prepared chickpeas
1/3 cup tahini
1/2 cup olive oil
1 tsp sea salt
1/3 cup lemon juice
2 cloves minced garlic
1 TBSP grated ginger
2 drops of Oregano Essential Oil (Where to get therapeutic grade essential oils)
2 drops Basil Essential Oils (Where to get therapeutic grade essential oils)
Put all ingredients in blender or food processor and mix until smooth. You may need to add more olive oil or some water if the consistency isn’t smooth enough. Any of the ingredients are flexible in amount, as some people prefer more or less garlic or lemon juice for instance. Once smooth, spoon out and eat!
