Autumn Pear Salad
I love nothing more than to buy large quantities of fruit when it is is season at the peak of freshness (and affordability). This week we got a huge bag of pears for a very good price and they were perfectly ripe, but I was afraid they would get soft if I let them sit too much longer. So, we chopped them up and created this gem of an Autumn Pear Salad.
Super easy and delicious.
4 cups of chopped pears
1/2 cup of organic dried cranberries
1 tsp cinnamon
Maple syrup to taste
Mix all ingredients in a large bowl and serve over cold yogurt ice cream. I loved this recipe so much. I think next time I might try fermenting it!
