Almond butter sandwich cups

 

We have been snowed in for the last 2 days, which means we were running low on treats. But, being the resourceful momma that I am, I decided to whip up these super easy, nutrient dense chocolates.

Almond Butter Sandwich Cups

Ingredients:

4 TBSP of coconut spread or coconut butter (where to find quality coconut products)

2 TBSP coconut oil (warm slightly to make it liquid if necessary)

6 TBSP almond butter (Where to find quality nut butters)

4 TBSP honey or sweetener of you choice (amount can be adjusted to taste)

3 TBSP of raw cacao or unsweetened cocoa

Directions:

Mix coconut spread, coconut oil, cacao, 2 TBSP of almond butter and 3 TBSP of honey in a bowl until very smooth. Fill 6 muffin tins with 1 TBSP each of chocolate mixture, which should leave half, which you set aside. Put muffin tin in freezer for about ten minutes to firm up. While it is in the freezer, mix remaining almond butter and honey in a small bowl. When the chocolate in the muffin tins is hard, remove from freezer and evenly divide almond butter mixture into the six cups and spread. Put in freezer again for 10 more minutes. Remove and add remaining chocolate mixture to the top of each one. Place in freezer one last time until firm.

These are easy and delicious. I was worried at first that they might stick to the muffin tins, but because of the coconut oil in the recipe, they slid out, leaving zero mess, which was awesome. My kids gobbled these almond butter sandwich cups up in no time!
