Primal Chocolate Coconut Amaze-balls
I’m not gonna lie. These are delicious. This one was born out of my mid-afternoon wandering through the kitchen looking for something sweet. It was one of those times I am glad I don’t keep junk food in the house, because I would have eaten ALL of it. Instead I let creativity get the better of me and used ingredients I had on hand to create some yummy, nutrient-dense treats. I’m sure somebody, somewhere else has thought of these, but they are new to me. So, if you too want a few bites of goodness, here is what you need:
1/2 cup cream cheese (mine is from a local farm, so it is soft. If you are using grocery store cream cheese, soften it to room temp first)
1/2 cup cacao or cocoa powder
1/4 cup melted butter (you can use coconut oil for a PALEO option)
1/8 teaspoon of stevia powder
1/8 cup of honey or maple syrup
1 cup of unsweetened coconut flakes
Mix all ingredients well except for half a cup of the coconut flakes. Once the chocolatey, gooey mixture is firm enough to roll into balls (if it isn’t add more coconut), form balls and roll in the remaining coconut flakes. Place on plate or tray and put in the fridge to chill. These were delicious, but you could adjust sweetness by adding more or less sweeteners. These are full of very nourishing, healthy fats. Only need a few bites to feel the craving quenched. Enjoy!

Since it’s such a small amount can liquid Stevia be used instead of the powder?

Yes, I think that would be fine. I generally prefer the powder, but I don’t see why the liquid wouldn’t work too.
