Primal Chocolate Zucchini Brownies
This weekend someone gave me a HUGE zucchini. The kind that reminds me that everything is bigger in Texas. They grew it in their garden and said there was more where that came from!
Such a big beautiful zuchini was destined for greatness. And greatness was achieved. Primal Chocolate Zucchini Brownies. This is how.
8 eggs
1/2 cup honey
1/2 cup melted butter
1 tsp baking soda
1 tsp salt
1/2 cup raw cacao
Mix well and add:
2 cups grated zucchini
1/3 cup coconut flour
Mix well, pour into greased pan and bakeon 350 for 30 minutes. These came out super moist and cakey. Delicious.

Came across your zucchini brownies & am excited to try them. However, I just wanted to double check. The recipe calls for 8 eggs. Is that correct? I’ve made a version of brownies similar to your recipe but with sweet potatoes & it calls for only 2 eggs. Just wanted to check before I went thought with the baking. Thanks!

8 eggs is correct! Have you ever baked with coconut flour before? It is extremely absorbent. This is good in the sense that a little goes a long way, so therefore you need less. But you generally need more oils and eggs to keep it moist. Good luck and let me know how it turns out.

Ok thanks! I have baked w/coconut flour & have a recipe almost identical to your brownies but it’s made w/sweet potatoes instead. The sweet potato recipe only calls for 2 eggs so that’s why I questioned it. Thanks for your quick response!
