Cherry Orange Einkorn Quickbread
Have you heard of Einkorn Flour? In addition to being an ancient grain, low in gluten and low on the glycemic index, it is incredibly tasty and easy to cook with!!!
1/2 Butter softened
2 cups Einkorn Flower (I get mine from Young Living since they started growing it on the farm I visited last year)
2/3 cups raw sugar/sucanat or unrefined sweetener of choice
2 large eggs
1/2 cup of cream cheese (softened)
2 tsp vanilla extract
6-8 drops Orange Essential Oil (where I get my essential oils… make sure you use an oil that is labeled safe for ingestion!!!!)
1/2 tsp Sea Salt
2 tsp baking powder
1 cup of cherries (fresh or frozen)
Directions:
Mix all wet ingredients in one bowl (minus the cherries) and all dry ingredients in another. Combine and mix until all ingredients are moistened, but do not over mix. Add cherries last and fold in, being careful not to crush them. Preheat oven to 350. Butter a baking dish or loaf pan and pour batter into pan. Bake for 35-45 minute or until top becomes golden and if you stick a toothpick in, it comes out clean! Let cool on baking rack and enjoy!!!!

what kind of cherries did you use, fresh or frozen? I don’t see them in the ingredient list.
