But what about pizza???
Going grain free is all good and well when you tell your friends how much you love eating bacon and that a burger wrapped in lettuce is delicious… but what about PIZZA??? There are a lot of wonderful grain free pizza alternatives. My personal favorite is this crispy cauliflower pizza crust, which I could eat anytime, it was so good. But my kids weren’t crazy about it, so I kept searching. Tonight I decided to try modifying my favorite coconut flour crepe recipe to do the trick. And it worked! Even my husband liked it and he doesn’t usually go for coconut flour anything.
Easy Grain Free Pizza Crust
8 eggs (free range/pastured is best)
1/3 cup coconut flour
3 TBSP melted butter or coconut oil
1/2 tsp of oregano
Mix all ingredients in an electric mixer and then pour into a well greased 9×13 pan. Bake at 350 for 15 minutes or until it poofs up and turns golden. Don’t let the poofiness alarm you. Thats just the eggs doing their thing. Take it out of the oven and cover with your favorite toppings, pressing down any parts that are too poofy. I smeared mine with red sauce, pepperonis and cheese and then baked it for 6 more minutes to melt the cheese. It was divine!
