Since going grain-free, cereal is something I miss more than bread, pasta or rolls. So finding a grain-free breakfast cereal was a must.
This recipe is paleo (if you serve it with coconut milk), primal and grain-free. And YUMMY. Definitely hit the spot for those cereal cravings I was having. Seriously. Does anyone else think cereal is the perfect comfort food?
Grain-Free Breakfast Cereal
2 cups chopped almonds
2 cups coconut flakes or chips (note in the picture that these are larger than shredded coconut, but shredded coconut might work. I like the texture of the larger pieces. A good place to find them is here.)
1 cup pumpkin seeds
1 cup raisins
Mix all ingredients in a large bowl and then store in an airtight container. Serve with either coconut milk or raw milk poured over and enjoy!
I used my favorite nuts (almonds) in the recipe, but those could be substituted with any nuts you enjoy. Depending on how much sweetness you desire you could also add more or less dried fruit. I used raisins, because that is what I had on hand, but it would also be delicious with dried chopped apricots or cherries.
