Pumpkin Seed Coconut Butter

…Is delicious. But I have put off sharing the recipe, because I couldn’t capture is yumminess in photographs, because it is a lumpy green mess… of deliciousness. And although my food photography skills are improving, I couldn’t seem to do it justice. SO. I changed tactics and am using cute baby distraction technique. First baby poses with pumpkins. Pumpkin seeds come from pumpkins. And they make delicious pumpkin seed butter. My baby helped me make the pumpkin seed coconut butter and it made him happy. It will make you happy too.

So, without further ado.

Pumpkin Seed Coconut Butter Recipe

Ingredients:

Pumpkin seeds (de-shelled… they are green)

Coconut milk

sea salt

Instructions:

Simply put the pumpkin seeds in your food processor, grinder or in my case, the nut butter attachment of my juicer. The seeds were a little too dry on their own to form a butter (I was unintentionally making pumpkin seed flour), so I used coconut milk and just added enough to give it the consistency of a nut butter. Then I added a dash of sea salt at the end. You’ll notice I did not call for any given amount of the ingredients, because you could do it with any amount. I had about two cups of pumpkins seeds and 1 can of coconut milk. This yielded about 4 cups of pumpkin seed coconut butter. It is delicious!!! My baby thought so too! Definitely an easy recipe I will make again!
